today we are going to make some blueberry jam just good old-fashioned plain blueberry jam real simple ingredients this is what you need you need 8 cups of blueberries you need 5 cups of sugar and a half a cup of lemon juice that's it Oh in a candy thermometer don't forget about that come on let's go do it look at those yummy blueberries yes I'm excited ok because I have been looking forward to this I really have and this is not even the end of my blueberry season I bought these from a vendor at the farmers market and so these are I don't even know where they come from I think they're from Michigan because he tries to make sure that he gets Michigan's stuff for me and this is 20 pounds of blueberries so yeah this is not the only thing we're doing with these ok but the difference you see the difference between these in the wild ones these are big and big and juicy but the wild ones telling you if you get the opportunity you got to do it we'll be going back and doing more but first I have to get through these ok so you're going to put the sugar and the blueberries into the pot you're going to turn on the temp you want to get it up to a nice boil and as it's cooking you're going to match the blueberries ok that's how it's getting too juicy there ok and a candy thermometer I'm just going to get that into place now remember we want to get this up to a rolling boil where it reads 250 degrees because that is what is going to help it set but once it starts to boil ok then we're going to add the 1/2 cup of lemon juice then we're going to stir it and work it some more because you want to make sure it doesn't burn and you're going to get it up to 250 degrees and then we turn it off and we start getting it into jars so in the meantime you want to get your lids in some water warming them up you want to get your jars which you have sterilized mine are coming out of the dishwasher here and you want to get your rings ready okay so it's a nice rolling boil I am going to add the lemon juice 1/2 a cup of lemon juice stir that all up and now we're going to watch it and have the temp go up to I think I said 250 before I was wrong it's like 215 or 222 15 to 50 same thing only different right okay so we're aiming for 215 to 220 we want that to happen for about ten minutes okay okay we're there we've been there at 2:15 for about 10 minutes now so by the time I did shut down and we'll be done with nice boil very pretty smells good in here like blueberries blueberries now we're going to turn off the heat and we're going to start swinging into the charge okay let's get you in here so now we are going to start scooping that up we're going to try not to make an absolute disaster of the kitchen but you know that's not going to happen that's why I've got an old cloth underneath I did a spoon test and that's where you take a very very cold spoon like that's been sitting in ice and you get a little bit of this and you put it on there and it should thicken up the consistency should thicken up so I think it passed we'll find out I mean oh and one really to do a lot of spoon testing but I honestly have never made no pectin blueberry before the last time I made this word all vanished I use pectin so we will see how this goes I can tell you it looks stunning just look so pretty I don't know if I'm going to get eight half pints out of this we'll see so I'm a fill these up you want them a half inch of head space half inch to an inch I'm like a fluctuate between the two how's that because these are going to be water best I think I'm making less of a mess of blueberries and I did with a strawberry jam it looks like I should get beat I pulled out two extra jars just in case but they won't go to waste oh maybe I will need one isn't this fun yes this is fun hello Duncan I'm just convinced I'm going to turn the whole kitchen purple on accident a little dribble you can do a little dribble okay so I filled up nine half pint jars now I'm going to get my wet cloth and I'm going to wipe those women do it wipe those Wims I'm going to wipe those rims really really good I want to make sure there's no sugar no blueberries no nothing that would cause the seal to fail okay and then I'm going to get my lids I'm going to put those on them I'll put the rings on finger tight and I will put them into the water bath I'm going to clean up this pot really quick in the middle of all that because this it just works really good I found that out with a strawberry so we'll be right back as I get it into the water bath see what I wanted to show you guys is even though I use the funnel I was still going over the top of jars and that's still see that would ruin absolutely ruin a seal which you don't want so you really want to make sure that you get those cleaned off really good so that you can enjoy this for a long time well not a really long time cause it probably won't last that long that was particularly messy see okay it's a mess okay those are clean now I'm gonna get the lids on and I'll be right back okay this is always just so much fun look too tight okay just finger tight not cranking about I got a little carried away there finger tight always confused me when I first started canning come in okay and seriously I mean if you watch different videos different videos well you know it looks like you're cranking it on but I'm betting that they're not because then you would have a lot of slicing happening and you don't want that you want it on tight enough tight enough then of course I can't find my my little bottom for the pot here so I had to pull out a ball canning thing that I had which means I won't be able to get all of them into here but I'll be able to do it twice so we're good I never ever ever ever throw away anything canning we'd let there's absolutely no use for it and I know that at some point that little basket thing is always going to have some kind of use so we're going to get these in here the water is super hot already and I've got it on high to bring the back up to a boil rather quickly we'll do that okay so there's five in right now and we're going to put the lid on okay so we got these all in there now we're going to have that come up to a boil it should take about three minutes give or take with the lid under because it's already supremely hot water and then once it hits boiling we are going to let it process for ten minutes once at ten minutes we'll start pulling them out we'll put them on a towel out of the direct wind and keep them there until tomorrow we're starting to bubble so I will be back after I've processed all nine pints okay we're happy so there we have it nine half pints of blueberry jam but we're not nearly over this week is going to be blueberry wait yay so until next
