today what we're doing is a grilled filled mushrooms with Welsh rabbit on toasted sourdough now got some lovely filled mushrooms here we've peeled them earlier I'm just going to finely chop some garlic nice thin slices then I'm just going to spread them onto the mushrooms grab a little bit of thyme I'll add some salt a little bit of olive oil okay like that and just a little bit of butter everybody loves butter to set a little bit of flavor okay I'm just going to pop these into the oven for about five minutes until all the natural juices come out now we are going to make the Welsh rabbit first of all we're going to make a roux which is butter and flour then we add our milk then we add our mature cheddar cheese some Dijon mustard smoked paprika and then we're going to use some lovely Guinness but I need to do is put my milk in the pan bring that to a boiling temperature which helps cook your flour and butter out this is the beginning process of making a roux I'm gonna get my flour now add this slowly make sure you always cook your flour out otherwise it will taste flowery which is not nice at all now I'm going to add my milk now you add your milk slowly they keep stirring keep adding they were going to use now zone whisk yes smooth consistent now you want your Roux conventional quite thick because it's going to be spread onto your toast okay now I'm going to take it off the heat I'm going to add my Dijon mustard now going to add my cheese and I'll just stir that in as well until it's fully incorporated this recipe for me is all about tasting so I've added a little bit of cheese a little bit of Guinness and I'm just going to try it now of a clean teaspoon mmm now I'm just going to grab the smoked paprika remember you can always add you can't take away now you see what the right consistency there you kind of want to do the figure of a action I put it into the fridge now until it sets so you can make this in advance if you want to and it will last three to four days in your fridge you come back from the pub late at night they've toast spread it on under the grill lovely as you can see I've already cuts closed a piece of sourdough who's going to put it on a tray under the grill okay just to toast it or if you're at home you can just pop it in the toaster there we go that's lovely now what I'm going to do so I'm just going to place the mushrooms on top then I'm going to get my Welsh rabbit from out of the fridge and spread it on top he like so now I'm going to put it under the grill until it goes golden brown what I like to do is a cut it in half use a little garnish of flat leaf parsley which can I get from your garden or from your local green grocers and there you have grilled filled mushrooms with Welsh rabbit on toast
