how to make aioli hello welcome to videojug my name is CJ and I'm going to show you how to make io Lee which is essentially a garlicky mayonnaise and it will be your friend so let's get started you will need the following ingredients to make one cup of viola there will be a recap at the end step 1 whisk it i only is basically a garlicky mayonnaise like I said it can be used in the place of almost anything where mayonnaise would be used it could also use as a dip you can dip shrimp in it it's often used like with calamari first I start off with an egg yolk here and a little Dijon brown mustard in there the Dijon not only helped with flavor but as you'll see when you're multiplying in this oil miss it also help kind of keep it bound together throw a little bit of salt in here that kind of helps things get started what I want to do now is just start whisking the yolk you want to get it till it kind of starts riveting a little bit alright that's good keep that there and now I'm going to microplane and some garlic garlic goes a long way see on the other side voila boom in there step 2 add olive oil what I want to do is slowly dribble it a few drops in as you can see some of the oils starting to get incorporated in there and it's starting to get a little thicker you got to go slow in the beginning like this it's kind of tedious when they make mayonnaise they use a canola oil you know this is staying yellow because the mustard and because I'm using olive oil and also when they make you know your your garden-variety Mayo they use it like one yolk - like almost a gallon of oil it can really hold an emulsification all right now my multiplication is getting a little better I'm going to add a little bit of lemon juice just right now I'm going to add more on the end to kind of season it up a little bit right now when it reaches this stage and it's kind of getting a little too glumpy you want to eat it out with a little bit of water there's a teeny teeny teeny bit it also helps your multiplication see just a few drops then later when you have a little more Pioli in here you can kind of thin it out as much as you want step 3 season to taste so tasty here so we're at still a little yogi yogi meeting yoke tasting someone add a little bit more lemon and I think a little bit more garlic actually mala it is a garlicky mayonnaise Cantonese a little bit of water there we go now some cracked black pepper and to finish it with some people don't put pepper in theirs I like cracked black pepper in my Olli it's up to you there's no big you know strict rules here that's delicious and it's all done
