hello and welcome to videojug we're going to show you how to make whole wheat brown bread the secret of this recipe is to leave the dough to rest overnight in the refrigerator this results in a much tastier fuller and nuttier flavor nothing compares to freshly baked bread specially when served hot and with lashings of butter step 1 you will need the following ingredients to serve two to four people 470 grams of whole wheat flour 1 teaspoon of instant yeast 240 milliliters of water at room temperature 1 egg yolk half a teaspoon of salt 3 tablespoons of honey 30 grams of butter at room temperature and some extra flour for dusting here is a list of the ingredients you will also need the following utensils a mixer with hook attachment a bowl a plastic bag a one-liter bread loaf tin a water spray bottle and a perforated rack step to begin the dough pour the water into the mixer then add the yeast the flower be egg yolk the salt the honey and the butter mix together on a low speed for about four minutes you if it appears too sticky while mixing add a little more flour then increase the speed slightly and let it mix for another four minutes transfer the dough into a bowl cover it completely with a plastic bag and let it rise for one and a half to two hours step 3 continue the dough once it has risen dust the dough and the working surface with flour then punch the dough down in the bowl with your hands to let the air out now place it on to the floured surface and fold the bread in towards you a few times shape the dough into a log then place it seemed side down into the loaf tin press it down lightly to mold to the shape of the tin cover it loosely with a plastic bag making sure that you allow enough room for the dough to rise place it into the fridge and leave overnight step four preheat the oven the following day set the oven to 190 degrees centigrade or gas mark 5 and let it heat up for 10 minutes tip make sure that the loaf has doubled in volume if it has not risen enough let it sit at room temperature for a further two hours until it increases in size step 5 bake transfer the bread into the hot oven Spray the insides of the oven with a little water to create steam which creates a nice crust and bake for 30 minutes step 6 test and remove once baked carefully remove the bread from the tin using a cloth to protect your hands from the hot bread and tap the bottom of the loaf if it is done it will make a hollow sound if not let it bake a little more now allow it to cool down completely on a preparation rack the holes help the air flow freely and your bread will cool quicker step 7 serve your homemade whole-wheat brown bread is now ready to serve enjoy it as a complement to any soup or stew or simply on its own and that's how to make whole wheat brown bread the videojug way enjoy you
