hi everybody i'm kimberly turner from cookingwithkimberly.com and today i'm going to show you how to make kumquat cranberry sauce mom's on the show today ingrid turner hi and i have these beautiful cranberries first of all they're frozen you can use fresh or frozen doesn't matter one whole package they've been rinsed off and picked through all as well look how pretty they are i love how they look like that all right we're gonna use one cup of water one cup of sugar dish we're gonna do a taste test to make sure it's sweet enough and we're going to use some kumquats if you've never seen a kumquat you make sure you check out my review on these guys that's what they look like and they're like little elongated oval citrus fruits but you eat the outside rind and the the peel as well and they're really tasty and i'm gonna show you what they look like inside and they just look like a citrus fruit very very cool they're quite um bitter they're bitter and sour but i quite like them i think they're so tasty there's something um a sweet redeeming quality in the peel to me oh i like eating them just like that mom likes them with a little bit of sugar so we're both gonna love this today oh those are good now i got these at my local harvest barn country markets make sure you check them out online at harvestbarn.ca there's two locations in southern ontario one is in st catharines and one is in niagara on the lake and they have these beautiful tropical fruits in right now for the holidays passion fruits and lady apples and kumquats and dragon fruit they had and star fruit awesome a little something different a little bit something snazzy so what i'm going to do is i'm just slicing my kumquats into very thin razor thin slices i just want it to look a little bit different than just mincing them all up okay now you could quite do that and that's fine be pretty mom said that would be the way she would go but sometimes we do things a little bit different over here yeah and we're just going to do slices because i think that they're going to look quite nice so i'm using um six kumquats you can use a little bit more if you want to i'm just thinly thinly slicing these guys getting them ready it's like a tart orange tastes like a tart orange i just absolutely am in love with them i think they'll go well with the cranberries i know so so i'm going to put one cup of water and one cup of sugar in a saucepan so once it comes up to a boil turn it down to a simmer and just let it roll so in the meantime i'm just going to continue slicing these very thinly with a nice sharp sharp knife and you'll see us in a minute okay that sugar and water mixture has come up to a boil i turn it down to a simmer a couple more minutes and we're ready to throw everything in okay that's been going for a couple minutes in gold my cranberries and in gold the kumquats okay so stir that all around with that liquid oh those little slices look so nice with the red cranberries wow all right so this is going to break come up to a boil see that oh yeah it's already smelling good so this is going to come right up to a boil and then we're going to turn it down to a simmer again okay we're going to let this roll on a simmer for about five minutes you're going to see that the cranberry skins are going to start to pop i love whole berry cranberry sauce this is not a jellied sauce this is not clear this is not jello like at all this is nice plump berries in a chunky sauce and so that's going to go five minutes you're going to see that those skins are going to pop the pectin is going to be released from those skins and that's going to be what thickens up your sauce as it cools yeah so that's kind of your saving grace at the end if you see that you want a little bit less berries plump berries you can use your wooden spoon and squish them against the side of the pot mix that pectin and everything in so that it's not maybe quite as lumpy as we like it i like it i like it really smooth you can use a potato masher that's right or a hand blender yep okay so this is up to a boil that quickly turn it down to a simmer and let it rip see you then okay this looks like it's done it looks absolutely beautiful i must say smell that smells good and you can see the little um you can see the little slices of kumquat and the lovely whole berries in the cranberry sauce i just love cranberry sauce me too you can eat that with every meal if i can me too and you know what you can use with desserts as well people don't think about that but this can be used as dessert so i'm also going to just squish like i said just a few on the sides a little bit more and we're good to go i'm going to put some into a serving bowl and the rest is going to go into a jar in the fridge for subsequent meals lovely make sure that you get a couple of the slices on the top so it looks extra pretty so that's going to just cool like this and the rest i'm going to put into a jar here extra cranberry sauce makes me so happy i failed to say do a taste test we had already tasted ours and it's just perfectly sweetened it was just right on point at one cup of sugar i don't like it overly sweet i like a little bit of a tang i like tart i'm gonna do a quick taste test here just to give you a good description of what's going on absolutely good it's citrusy it's tart it's tangy oh boy it's just sweet enough to it's lovely that is fantastic that's good so if you have the privilege of getting some kumquats make sure that you use them for some really cool dishes like this because boy they go really nicely it has the same kind of flavor profile as a cranberry it's really kind of bitter and and sour so i thought it would be perfect in some cranberry sauce it is so into the refrigerator you want to let this completely cool down it's probably going to take a good two hours to do that and that way it's going to thicken up nicely all that extra liquidy sauce don't worry it's going to thicken up and be a nice congealed sauce to be wicked with turkey great with pork really nice with just about anything i could think cranberries contain a lot of tension so you don't have to worry that will thicken up very nicely that's right all right so i guess we'll see you when that's cooled down boy that's good well our cranberry sauce is nice and congealed it's cooled now i'm even tilting it and it's not moving beautifully thickened lovely and we're ready to eat dinner so we're going to try this for you and show you look at that isn't it beautiful presentation put a little sprig of holly in it or you know any nice little orange slice or something like that be lovely it looks delicious i can't wait let's do it voila here mom grab a kumquat look how thick that is oh it's all standing up on your spoon i love cranberry sauce and i don't just serve a little bit with mine i serve like a big giant dollop on my plate look at this it's juicy it's all nice and plump look at these big pieces of berry and that nice slice of kumquat right on the top come on man it's delicious absolutely fantastic mmm if you get a slice of the kumquat it takes it to a whole other level boy that's good i love tangy tangy things sour things are my favorite they really are and that's sweet and sour has a nice balance to this everyone's gonna like it so i would like it even if it was more tart but everyone's gonna love this even the kids are gonna love that boy that's good and you use the whole kumquat yes i love that appealing everything that's right anyhow folks that's how you do it i hope that you experiment with your cranberry sauce kick it up to another notch don't always have to go traditional but kumquat you know kumquats are a traditional holiday fruit yeah they're very very much a treat over the holidays so why wouldn't you put it in your cranberry sauce yeah a lot of you can incorporate it into your grease or cocktails lovely hot cocoa or any kind of dessert be awesome this would be beautiful with turkey with chicken with duck it'd be great with our ham tonight yes make sure you check out our recipe for our honey glazed spiral cut ham it's gonna
