so hi and welcome to carnivore it's barbecue season so now the only deering season around us a row and this is what we've got a nice little robot so the aim of this series is to turn this little robot into steak sausage burgers and probably a little joint so that's what we're going to do follow it through step by step okay first thing we've got to do is get the whole carcass into workable bits so what we're going to do i'm going to start at the front and work our way down to the back first thing we're going to do is take his neck off so it's just a cut at the top of the shoulders saw it through the bone and just cut it off okay so there's his neck next thing i'm going to take his shoulders off if you look at his shoulders feel across the top feel the top of the scapula there where the ribs come down put a knife in between the ribs okay so that's his shoulders off next we're going to take the loins off the haunches if you look there you can see where the end of the pelvic bone is a little bit of bone poking up there just cut in front of that through down to the spine like that so so there we are we've got it in our three bits haunches the loins and the shoulders and the neck okay so what we're going to do we're going to start at the front again we'll start with a net because we're going to make this into sausage and burgers i'm going to take the phillips side phillips off the neck you can see where the bone is there look as it comes around in this little star we're going to make an incision down the top there'll be a piece of gristle in there you can see the bone there and the gristle as it comes down and that's the net filler taken off there so what we're going to do now then is just repeat the process on the other side follow that down over the top okay so once you've taken them off if you look on the other side you can see where the windpipe and everything has been taken out when it's been growled just make sure there's nothing nasty on there any any bits of debris or whatever as it's been product in the field or whatever like so there we go and that's the neck sorted okay so next it's the shoulders i'm gonna start on the shoulders you can see two scapulas are sticking up there you can see the center bone like it was within the neck to start at the top you'll see the gristle as you come down that attaches it itself to the bone on the top around the side of that there's one shoulder one side of the shoulder move from the cage bone you can see it there so just repeat the process you take the other shoulder off the other side of the cage bone so in again across the top okay there we go so there we have it we've got two shoulders and we've got the cage brain as you can see that's where they started to that's how they are now so now we're going to bone the shoulder out and get it ready for the either sausage or burgers and trim all the nasty little bits away again as we did with the neck and we're going to start by splitting the shoulder in half through the joint if you just feel you'll feel the shoulder joint on the back little knuckle there take your knife straight down in a line and there's the joint lock just opens up and like say we may gonna make this into uh burgers and sausage so we're just trimming off there's a bit of blood in there and take that out just trim that away okay so that's one side done now we've come to the hand side you can see there's a bit more a bit more of shoulder damage in there from um natural shot so it's a bit more labor intensive see what the blood does from the shock of the bullet it follows itself down the seams see the different seams of the muscle okay so there we have it that's one shoulder being boned out just to show you the bones from where they sit you've got the one shoulder there that bit fits on there and then scapula fits onto there like say so i'm sorry about that but that's how that's how they are that's how it's been taken out so as long as you take your time it's pretty simple and always rule of thumb if you don't think you'd like to eat it then don't put it in it's quite simple so what i'm going to do now is get on and do this one and move on to the lines subscribe to teamwildtv for all the best hunting shows on youtube you
