hi and welcome back to sweets and beyond my name is Ida and today I'm going to be showing you an easy summer treat lean back they go go here are the ingredients okay this is all we're going to be using here I have just coconut it came like this we smash them with a sledgehammer we drilled and we did everything to it we took the liquid out and this is what the liquid the coconut water what came out of the coconut and then this is just I just rinsed it going to be using one and a half cup of sugar a little pinch just a little bit of salt because remember I always say with sweet you have to put a little bit of salt this is one cup of coconut juice with pulp I got it go go see that it has that nice pulp and we're going to be using two cups of hot hot water let's get started okay so the first step is we're going to make the coconut milk for the nimitta go home here I have two cups of hot water but I'm only going to use for one your coffee YUM perfect one cup and put in there we're going to put this the chunks look at the hole that we had to drill well I didn't drew my husband camera mended so we're going to put the chunks of coconut it's okay that all don't fit we're going to do it in little batches just going to put it on and we're going to turn it until it is all nice and wait doesn't fit this chunk is joy so know it if you don't have a little ninja chopper like this you can use your blender okay so now that it's nice and incorporated we are going to mix it for at least two minutes and everything is nice and warm so two minutes because we want to extract all the milk from the actual pumpkin okay so I'm going to place I place the rest of the hot water that I didn't use from the two cups I placed it in here and don't worry that this looks really chunky we're going to strain this I'm going to strain this out I have so many fond memories of lemurs in Puerto Rico always there was in my neighborhood every neighborhood in Puerto Rico there was always a lady that used to sell lemurs I remember the work order my favorite coconut so now that you see the difference how it is so we're going to let it sit for a few minutes and then we're going to strain it okay so now it's been a few minutes see how foamy it got on top that's what you need so now we're going to strain it this is cheesecloth and underneath I have a strainer if you don't have cheesecloth you can use the regular strainer as well so now we're just going to put it in here carefully of course not everything will fit and the reason why I'm using a cheese um cheesecloth is for it to be nice and smooth let me grab it it got stuck here and we're just going to express all this beautiful coconut milk how beautiful the coconut milk is so now we're going to add the one and a half cups of sugar and it seems like a lot of sugar but when you freeze things they need to be a little bit sweet sweeter than normal the pinch of salt and the coconut water that we got from the coca they need to be a little bit sweeter because when you freeze things it kind of loses a little bit of the sweetness this is different for most of the lingers that you might see of coconut but this is how I grew up eating it all fresh all natural only coconut I see some that they add on condensed milk or evaporated milk to me this is the original Lin birthday cake so we're just going to stir this around making sure I may need a bigger spoon and I had it right here we're just going to move it until we no longer hear the rain enos of the sugar and we're going to try it see I can still see the grains of sure oh my goodness it's perfect oh but I'm going to keep on stirring it to make sure all the sugar is dissolved and now we're going to play some in the cops okay so I have my cups ready these are 9 ounce cups and I'm just going to fill them and the chunks that you see are from finding more the chunks that you see here are from the agua de cocoa that had a little um pulp because I prefer that one with the pulp because it's um young coconut so it's nice and soft it's not hard like the coconut we ground so all we're going to do is we're going to fill the cups till see look at the coconut chunks on top I'm going to fill them like this and you will see for me it'll be tomorrow for you it'll be like a few seconds from now but the best part about it is it's going to separate the cream is going to flow to the top and then we're going to have the coconut water you will see tomorrow so freeze these you can cover them with plastic wrap if you want I'll fill the rest up and I won't let you know how many of these cups I filled so you can cover it with plastic wrap and leave it in the fridge until frozen I will suggest overnight so the next time you see me I will be eating one of these okay so here you have him they've been overnight and look how beautiful you see how the coconut water separates and this my goodness this cream of coconut on top is the best so it made a total of five in the mix gave five and a half cups so I divided it in five and I can't wait up I've been waiting all night for this but if you like this video you know what to do give it a thumbs up and after this there's going to be a little box that says click to subscribe click on that if you haven't subscribed also on the bottom in the description box I have all my links to my social media to my Facebook and to my Instagram if we look at that how beautiful this is and you're not Porto Rican if you don't this is how you have to eat it you have to flip it hmm try it
