this is Brooklyn soda works and today we're going to show you how to get the fizzy seltzer possible out of your soda siphon with just a few simple tips so what makes Seltzer bubbly Seltzer or soda water is simply carbonated water in order to carbonate water you have to add carbon dioxide or co2 which is gas and get it dissolved into water the bubbles in soda are created by co2 that have been dissolved in a liquid escaping towards the air the more co2 you can get dissolved into your water the more bubbles you'll have and the more strongly carbonated your CELTA will be today we're going to show you how to get the best results with your service - step-by-step first put your soda siphon into the fridge to get it super cold second once a siphon is called take your cold water and pour it into the siphon you have to get your water as cold as possible because the colder the liquid the more co2 will be absorbed water from your fridge is probably around 45 degrees Fahrenheit so that's a good start but remember the colder it is the better so we use ice cubes to get our walls as cold as possible we want just a few degrees above freezing now pour this freezing cold water into your pre chilled soda siphon all right now let's seal this up and insert a co2 cartridge here's the next very important part majid ation you really have to do a good long bigger shake here I always say at least 30 seconds and shake as hard as you can you should be tired afterwards looking at this clear bottle here you can see the reason why we have to shake so much so co2 can only enter the water where it touches the water at the surface if you shake very gently you get a slightly bigger area where the water and co2 are touching but if you shake it really forcefully you can see that you have way more interaction between the water and co2 which means a lot more co2 is getting absorbed by the water and after all that shaking remember always set like you're safe and sit for a while before serving it put it in the fridge keep it cold so now we're ready to dispense some seltzer but if you really want salts are so bubbly that I had to drink we have one more tip for you so the more co2 you force in the more will get absorbed into the water but we are limited to these a gram cartridges here it's the only way to get more co2 dissolved into a water is to use two of these cartridges one issue with this is that a siphon head has a pressure and if you add two cartridges in a row the pressure inside the siphon becomes too high and water and gas we can force that spray everywhere making it so to get around this problem we have to add one cartridge shake well let it settle in the fridge for at least 10 minutes and only then add the second cartridge this lots of water absorb all the co2 from the first cartridge for you add a second one and prevents you from over pasteurized in the siphon all right now you have something extremely bubbly Seltzer let's see if Antonia want to have a glass Cheers want to try carbonating something other than loser check out our other videos for healthy and fresh soda recipes and also recipes on how to make delicious carbonated cocktails thanks for watching
