Please explain how to rim a cocktail glass - raising the bar with jamie boudreau - small screen

in this segment we're going to talk about [ __ ] and i mean cocktails a lot of bartenders like to rim the entire glass i'm totally against that the usual technique they use is they take a piece of lime rub it right around the whole thing shove it into the sugar and away you go you know it looks perfectly fine i have a problem with it though and it's it's mainly has to do with where the sugar is i want the sugar on the outside of the drink um i don't want it on the inside of the drink is it going to affect the cocktail itself this is not the way that we do rims not here anyway i'm going to take half a lime and i'm just going to wet the outside of the glass i'm going to do something else too i'm not going to rub along the whole glass but i'm going to leave a little portion that's not going to have any sugar or salt or whatever you're riming with just that way the guests will have the option of whether or not they want to have sugar now i'm going to take the outside and turn it and that way you have rim on the outside not the inside and the option not to have the rim another little tip when you're doing your rims leave it for a while right now if i bang this down you're going to see a lot of sugar falling down but if i did this a half hour ago you have a rim which is sticking on there and not going anywhere and that's how you rim a glass you
