what your opinion makes an enchilada essential well an enchilada is probably my favorite breakfast item being from New Mexico and I believe they were designed to fill that void left in your soul after a night out on the town my perfect enchilada is really an incredibly simple as it should be with very good red chili from northern New Mexico you can tell by the nice dark color it's got a rich flavor almost like a citrusy flavor in the red chili just naturally and it's just brought up with a little bit of vegetable stock and some people will add Roux to it to thicken it up B we've got some beautiful handmade corn tortillas which we're not going to fry we're just merely gonna warm a little bit of this fine northern New Mexico red chili just put a layer down on the bottom mm-hmm a tortilla and then some very nice New Mexican white cheddar we do lots of stuff here and I like to buy local as much as I possibly can so put a little bit of cheddar a little bit of just diced sweet Spanish onion and another layer of red chili and this really are the only ingredients you need but to really make it just an absolutely soulful and the type of dish that the first bite you take puts a smile on your face we're gonna put a just perfect sunny-side up egg right on top of it New Mexico we actually do our enchiladas flat we do when the rest of the country they do them rolls have you ever heard why that happened it P polite say because we're lazy because we just don't have time to rolling it's too beautiful the weather subunits like you know centralizes yeah you know we don't want French people we don't want to spend all day cooking we just don't want something we can just throw in the oven and it'll be ready to eat I'll throw this in the oven and you can we'll start on the same side up egg medium heat because we don't we don't want brown eggs we don't want brown on the bottom we want a beautifully cooked just white egg warm yolk no crispy burnt bits around the outside so we got a little bit of butter in a non-stick pan okay so we got our butter is just beginning to sizzle we're not browning the butter we're gonna put our eggs in here just gently and so we're gonna let this begin to cook and then when it's almost cooked we're going to put a lid on it and just turn the flame off and let the residual heat from the pan and the lid finish cooking the egg and have the perfect sunny-side up egg pepper okay so right now the the whites are just starting to cook and we're gonna go ahead and just lid this up turn off the flame and wait for our cheese to melt and then we'll assemble this perfect breakfast I can't wait 10 to 15 minutes out of hot oven because really all we want to do is melt the cheese and get the chili bubbling and get it all married beautifully so we're gonna top chop just a pinch of fresh cilantro this will be the only garnish necessary and because I firmly believe as garnish should be an important element of the dish and here's our perfectly cooked sunny-side up eggs that to me is the only thing I would consider a enchilada never have it dig down deep those colors the red and you and this is gonna be hot mmm delish very fantastic that is an essential ought of it
