Please explain how to cook a delicious deer shank by scott leysath

now one of my favorite tougher cuts of meat is a venison shank but first I want to brown it and on to brown it I'm gonna add some flour into the little dip lock bag here and I've got some high mountain venison rub the high mountain venison rub is going to give it flavor the flour is going to help aid in browning and I like to over season it because a lot of this stuff's gonna fall apart it's gonna fall off and zip the bag up give it a shake I'm gonna get it nice and brown on both sides if you don't brown it on the outside you're gonna lose a lot of flavor I have browned venison shanks that are going into the westin slow cooker on top I'm just going to start dumping some vegetables there's some celery some onions some whole garlic cloves carrots I've got some cheap red wine do not use good wine to cook with drink the good wine cook with cheap wine that has a neutral flavor here's some beef stock you can use wildgame stock also just enough to not quite cover it I go about half way up then I put the lid on let it do its thing this is going to take several hours this is going to take the better part of the day like cooker I've also added some Brussels sprouts and some potatoes and I'm gonna add some fresh rosemary look at how that looks so far right right that's good in it obviously this was one that I already had going in another Western slow cooker like this oh the meat has just fallen off this beautiful beautiful venison shank there's a nice tender piece and I was thinking maybe some Parmesan cheese would be a good idea right there fresh rosemary from the yard if that doesn't look good to you well Cooper here knows better Cooper you're not gonna get my venison shank and I've got my eyes on you
