Over the next few videos I'm gonna show you how to make my three favorite sauces and let's start with sweet chili chicken sauce Let's take a look at the ingredients. Thirty grams of garlic pickled garlic, 1 tbsp of salt a cup of sugar, 1/2 a cup of rice vinegar red chillies and yellow pepper. So first, let's start with de-seeding the chillies and peeling the garlic. 6-7 chilies is enough. We don't need this sauce to be too spicy, Okay, that's good to go. The sauce is supposed to come out a bit sweet and spicy in a good... combination Here I use Thai garlic it's smaller than Chinese garlic but it gives a lot of taste to the sauce And honestly, if you don't want to get hassle with peeling the garlic they have the peeled garlic sold in the supermarket And next I'm gonna put chillies garlic and pickled garlic in the food processor Just get the hard stems out Everything goes into the food processor. Just give a little bit of water in the processor Start it right away I think that's good enough Now, we have all the ingredients ready so we're gonna put them all into the pot Give them a boil with low heat and we boil it until the sugar melts Use some water to rinse all of them out because we need some water in here anyway And rice vinegar So I let this boil with the low heat until it reduce to the thickness I want and don't forget to stir it from time to time just to make sure that the sugar won't get burnt As you can see I make a big amount of sauce so I plan to bottle it and keep it for few weeks and in order to keep it that long I have to put it in the bottle that's been sterilized and while waiting for this sauce to be boiled and get even thicker I'm gonna sterilize this bottle right away And now the sauce has nice and thick texture. I think is ready.
