today we're making basic nigerian stew and um these are the ingredients you need your meats maybe your chicken your beef goats meat or fish depending on what you want to use but if you're using chicken make sure it is the hard chicken it works better because the soft chicken softens easily so we use the hot chicken it's preferable and then you have your mince garlic it's optional your onions this is a crushed bell pepper crushed tomato or you can blend them together if you want your ginger powder you can use fresh ginger thyme i like using paprika but it's optional you can also use that minced seasoning i use complete seasoning or you can add any seasoning of your choice and then i you also use crushed pepper if you want it spicy you can add any hot pepper maybe habanero or dry pepper or dried bell pepper or blended pepper and then of course your salt so let's get cooking i'm going to start with boiling the beef the chicken so we're going to start with boiling the chicken i'm adding on one medium sized onions so i'll add um maybe one teaspoon of salt i like adding my salt as i go along my minced garlic one tablespoon time one tablespoon ginger powder you can use half if you want but i like mine spicy so [Applause] and then one tablespoon with spice [Applause] one tablespoon paprika that's optional the beauty of cooking is you cook to your paste and a little water just a little so that it doesn't burn on the bottom then you start to combine cover and boil boiling we're going to put a pot the pot you will use the the pot you eventually use for your stew you pour in your minced tomato and your mince bell pepper red bell pepper so i turn it on i turn it on or now on high when it starts boiling i reduce the heat to low so as you boil the chicken it's going to bring out more water so you don't have to add um too much water at first just enough water to stop it from burning we're not gonna cook it to be really tender because it's still going to cook further when we're making the stew and then we're still going to fry it or put it in the oven whatever we want but i'm going to fry this one so our chicken is once that is um put another pot we put another pot on the fire for frying the chicken at this point you can decide to grill your chicken fry your chicken or use it like that in your stew i add enough oil by the time i'm done i can always take it out and recycle it so so i'm gonna pour the oil that i use and fry in the chicken into the tomato mixture i'm gonna see this now i add my chicken oh you can keep the chicken aside and then serve it in a different um dish while you put the stew in a different dish but this time i'm putting it inside the stew allow it to cook it's more maybe i leave it on for say 10 minutes for 5 minutes i leave it on for say um seven more minutes and then i take it down oh that looks so good that looks so good it's calling my name yes i am here calling my name our steel is ready that's good and then i'm going to drain the excess oil from it draining it is really easy just move the oil to one side and then maybe a deep spoon or you can pour out if you want you can store this and put it in a container and store in your fridge for further use you
