hi my name is Ola Hercules I'm the author mamushka and today I'm going to show you how to make a Central Asian dumplings called Monte so Monty is a Turkic dish in the south of Ukraine we make it as well though because we live quite close to Crimean Tatars normally it's a Muslim dish so normally it's made with lamb but in Ukraine we like to adapt it according to ingredients that are local so I make my Monte with pork belly so the pasta dough for Monte is really easy to make it's one egg 150 mils of water and as much flour as it would take us my grandma used to say to make the filling simply hand chop the pork belly it makes a really big difference if it's a much nicer texture of your hand chop the belly and it has to be really really nice meat because there's really much to hide behind there aren't many spices it's literally just pork some chopped onions and the tiny knob of butter and some salt that's it really simple dumping so traditionally Monte are steamed and then served with melted butter and cracked pepper the way I do it though is a little bit different I love making burners at a brown butter because got this amazing nutty flavor I also serve it with some crispy shallots for texture and a little bit of coriander the whole beauty of monty is to eat the whole thing at the same time because all of the flavor is inside those juices so try it try to have the whole thing at the business at the same time
