Please explain how to scramble, poach, boil and fry

hi I'm chef Jason Paul today I'll be showing you some different techniques using eggs from happy egg now I'm gonna show you how to fry an egg one of the more simple techniques but of course there's a few tricks I like to start with a little olive oil if you have a cast-iron skillet perfect tool for the job you put a little olive oil maybe some bacon grease whatever you like so my oil is hot I'm gonna go ahead and slowly put my egg in and now if you hear that a little bit of a fry sound that means your oil is nice and hot and you're good now you don't want it smoking hot otherwise you're gonna burn the white before it cooks now we're just gonna let this sit for a few minutes we're not gonna flip this egg and we're just gonna let it get nice and cooked so once your egg is starting to set up you may want to just move it slightly just to see if it's sticking but don't move it until it releases itself just maybe a little bit of oil you can base that area if you like it it'll help cook it faster without overcooking the bottom starting to like the way this looks then I'll just remove this kind of take it to the edge of course we finished with a little salt you have a fried egg scrambled eggs and for one of the more popular uses for eggs I've got three eggs I've cracked them into this bowl Fork is great you can use a whisk the reason we use a fork is because it helps to keep the eggs from sticking great start with a little butter we'll get that melted get it a little bit foamy now I put a little bit of salt in with the eggs just a pinch okay now that I hear that the butters foaming go ahead and add my eggs okay and I'd like to start moving my eggs around now that they're kind of starting to scramble a bit I'll add a pinch more salt a tiny bit of pepper again if you like pepper you can use as much or as little as you want they cook fairly quickly that's why this is a great recipe for home use you can get these done really fast in the morning for family or kids that's done so if we take them right over here right onto our plate voila now I'm going to show you how to boil an egg well the number one trick that I can teach you is to start with your water boiling bring the water to a boil first go ahead and take your egg and place it in the boiling water if you like hard-boiled your gonna boil it for about nine minutes if you like it's soft-boiled maybe around five to six minutes now once your egg is totally cooked you're gonna go ahead and want to cool that egg down as fast as possible the best way to do that is in an ice bath we're gonna go ahead and pull our egg out when it's done right into the ice water we call this shocking this is gonna stop the cooking process keep the egg cooked exactly how it should be now once the egg is cooled you're gonna find that it's gonna be much easier to peel now the best way to do this is just to crack it gently on a counter you don't want to be too aggressive you want your whites to stay nice and smooth maybe you're making deviled eggs at home now I'm gonna go ahead and just start peeling this and now we're just gonna cut it in half lovely best way to serve that with a little sea salt right on top you always want to make sure you season your eggs and there you have it boiled egg now we're gonna work on poaching an egg there's a lot of different techniques for this I'm gonna show you the one that I found works the best so you've got your egg now all eggs no matter how great the quality which by the way these are very great quality eggs they have a little bit of water in them so if you put your egg into a strainer like this it to help you take some of that excess off this is going to give you that sort of nice tight poached egg that you're used to seeing and all those beauty shots on the Internet so we're just going to roll it in you want your water to be at a gentle simmer not a rapid boil now you want to give your egg just a few seconds to set up initially you don't want to move it around too much in the beginning what you're trying to avoid is having it stick but you don't want to move it and push all the egg white away about two to three minutes for the perfect poached egg looks like we're getting pretty close so I'll go ahead and pull my egg up use a damp towel to dry your egg just a little bit of sea salt on top maybe a fresh crack of pepper voila okay
