hi i'm matt kemp from the underground cookery school i'm going to show you how to make a series of sauces hope you enjoy well i'm going to show you how to thicken a spaghetti sauce now it made the spaghetti sauce earlier on by frying off some onion and garlic in the pan i added a bit of red wine and then I added some tinned tomatoes which I'd blitzed out that's the consistency that I've got and if you want to see me do that just go on to videojug and look up how to make spaghetti sauce what we're gonna do now is over the course of the next few minutes it's just cook that sauce down and what we're doing is adding a naked flame to get as much of that moisture out which in turn will intensify the flavor and thick and the texture of the sauce so I'm just going to keep stirring this for about 2 or 3 minutes and we should have it it goes without saying but obviously cooking times vary in accordance with the size of the sauce so if you had a big industrial pan of sauce on the go it would obviously take considerably longer cooking is all about textures and consistencies rather than looking at the clock and this small version is really just to give you an example well that's now cooked down beautifully it's been on the hob for a few minutes and that sauce is now beautifully thickened and perfect for serving and that is how to thicken spaghetti sauce
