!! And welcome to Nicko's Kitchen once again. Today we're doing something I have had a few request for. Since I been doing Nicko's Kitchen. So, We're going to make it today with a healthy twist. We're going to be making a delicious Frittata. Alrighty guys, a delicious and fresh Frittata They are fantastic, I love them ! They're great for a mid- morning ah, snack or
brunch or even lunch time, dinner time. They're perfect anytime! In my opinion. So! this is what your going to need. You're going to need: A couple of bell peppers or some capsicums as
we call them here in Australia. Now I'm use to using the red ones. Mainly for the color... Ok, because we're going to be using obviously the egg which is a yellow. Um, and I got a enough green here so it's just
contrast just for a little bit more color. got some pumpkin ok, just a normal pumpkin, some zucchini, some broccoli, some onion, some potatoes, some dill - one of my favorite herbs. Ok some dill... And of course some parsley as well. Well also I got some eggs. Now, I'm going to be using three eggs here. And, I'm only going to be using two of the whites Ok, so I'm gonna split one of these. And just use the yolk of one of these eggs and discard the white in it. Ok , but you will need three eggs. So... Guys, it doesn't get any fresher then this so. Let's get started! Alrighty guys, So what I have done is I've cubed up all our vegetables. Ok, so we got our bell peppers or capsicum just there, Ok, we've got our potatoes just there, the broccoli, onion, the pumpkin, and the zucchini. Now the bell pepper or the capsicum and
the onion we can put aside for now. But these four. Ok what I want to do. Is go and put on a pot of boiling water Ok, Because we're going to boil these and cook them. Ok, just until they are very tender. It won't take long because they're very small
and because they're all the same size. Alright, so a pot of boiling water. I'll take you over and show you how. Ok guys so we got a pot of boiling water. I just put some salt in there as well. We just want to add our pumpkin, Our potato. Our broccoli. And our zucchini. Ok, and we only want to cook this for about. 5 or 6 minutes, Just until their tender. Ok guys after we've done that, Ok guys after we've done that, I just want you to drain, The vegetables just into a colander just like this. Just let them drain like that Ok, let them sit there and we'll go onto the next part. With the capsicum or the bell peppers and the onion. Ok guys just a just a drizzle of olive oil...Ok, Just like that. Beautiful!.. And we just want to add the onion, And the bell pepper or the capsicum. Just give that a mix around, Now we just want to cook this, again until it's nice and translucent, nice and soft. Nice and tender. Ok guys what we want to do. Now is just add in... The other vegetables.. that we.. boiled in the water. So just add them back to the pan. And we're just going to crisp up those potatoes on the outside. To that guys we just want to just sprinkle
over some dill and parsley as well. Just mix that through. And of course season with some salt and some pepper. And then we're going to add. our egg mix. And we're just going to sprinkle it...evenly, Just over the top. Just like that. Just give it a little jiggle. Let that bad boy settle right down. Ok, just tilt it, just to get that even coating which we got. Ok, now!..Very important Don't touch it. Leave it like that for 3 or 4 minutes.Ok, It's not going to burn. it's on a low heat Ok,now what we're going to do after that. Is if you got a griller Ok, we're
gonna pop after 3 or 4 minutes. We're gonna pop this underneath the griller so the top
here can cook and get nice and golden brown. If you don't have griller put it in the oven. Ok, and leave it in there for about Again, another 5 or 6 minutes. Now if you got a pan that's gotta handle
that can go in the oven. Fantastic ! If you don't a little trick. Grab a tea towel or a cloth wet it
and then put it in there . And your handle will be fine it won't burn and melt. Ok guys, You know when the bottoms done, Is just when you pull back just around and you
can just pull it back just like that. Ok, so you know when the bottoms done is
when you can just pull it back . Ok so what we're going to do now
is just pop that under the griller. Again for about 4 to 6 minutes. And there you have it guys, A delicious and easy Frittata!! Absolutely beautiful!! Fresh ingredients !! Very light! Ok, very very light so... Let's give this a taste! Look at that! Absolutely beautiful! ** Chewing Noise*** The dill and egg just are a marriage made in heaven. The onion the bell pepper. The pumpkin gives it a real nice sweetness. The potato gives it some..some good body. That! is absolutely beautiful. I just serve this a very mixed salad. So this a very brunch type of dish that you
