hey y'all it's Jess welcome back to the kitchen here at roots and refuge farm today I'm gonna be sharing a recipe with you but it's not just any recipe I met a sweet woman on Instagram quite a while ago and her screen name was forgotten why Farms her name is Abby and she eventually ended up messaging me and saying hey I've written a cookbook and I love to send you a copy so I received just a few weeks ago this beautiful book in the mail called cozy Christmas baking which Abby's written alongside her daughter and they've shared a lot of their heirloom like family recipes full of beautiful recipes color pictures it's a wonderful book and they've also shared a lot of ideas in making the Christmas season more cozy and just heartfelt and homemade so I got this book and absolutely loved it I've actually already started playing around with some of the recipes and trying some things definitely making plans to make a lot of these things and Abby invited me to take part in this collaboration with a handful of other ladies that would also be sharing recipes from the cookbook I actually already gotten to watch one of the videos my friend Kaylee over at the farm on Quail Hollow posted her video last night it looked so good she made the rustic apple pie out of the book and today I'm going to be sharing with you this recipe for a delicious cocoa cream pie I've actually already got my pie crust rolled out in the pan and we're about to start in on the recipe I used one that I already had in my freezer but we're starting from there with this book so let's go make a pie first things first I've got my pie pan with the crust already rolled out here and I've got a bunch of beans in this because I need a pre-baked this crust I'm actually following the instructions out of this cookbook to do this where she teaches here how to blind bake a pie crust because with the nature of this pie it's like a pudding pie cream pie the inside is already cooked and so whenever I put it in here I'm just going to be chilling so I've gotta cook the crust beforehand I've got my oven preheated to 375 here and I'm gonna go ahead and put this crust in the oven so what I did there is I just lined the inside of that pie crust with parchment paper and put dry beans in it you can use rice if you've got high weights you can use those I've only ever just used beans so that's gonna cook at 375 for 20 minutes and then I will take it out of the oven remove those beans in that paper out poke some holes in the bottom of the crust with a fork and then return the crust to the oven for another 15 minutes until it's nice and golden brown at which point I can fill it up with the mix that I'm about to prepare for this recipe we're going to need 1/2 cup cocoa 1/4 cup cornstarch 1 cup of sugar 1/4 teaspoon of salt 2 cups milk 1 teaspoon of vanilla which I make that myself which is why it's in the Smirnoff bottle and 3 egg yolks all right so I just pulled my pie crust out took the weights out and I poked some holes in it and put it back in the oven and so it gets nice and golden brown now that this is halfway done I feel good about going ahead and starting my filling recipe because it should be finishing up about the time that this is done baking I'm just saying about eating pie right now pretty excited heavy-bottomed pot here we go got a whisk now I'm going to mix together my cocoa 1/2 cup of back my quarter cup of cornstarch and the beaten egg yolks now these are good and mixed together now I'm going to add in my sugar she included a note here that said that her granny's actual original recipe called for a cup and a half of sugar but that she had bumped it down to a cup because she didn't like it so incredibly sweet and I stuck with her suggestion of using 1 cup because while I have a sweet tooth I've you know I like things like chocolate things to be more chocolaty than they are just like super sweet so I think I would like it with not have the salt and the quarter teaspoon of salt which I'm just gonna finish that because you know I've got this on medium heat and I'm stirring my ingredients and the next thing that I have to do is gradually mix in this 2 cups milk and I have to cook it until thick whisking until smooth and she does make a note that this can take like 10 minutes so I'm gonna go ahead and get started on the gradual mixing and I'm also making a pot of coffee as you can see right there because if you have to sit a stove and makes for 10 minutes there should be coffee hey I've got it off the heat now I just poured my vanilla in here and it's nice thick and I'm just getting it making sure there's not any lumps in it and as smooth as possible now I'm gonna pull my pie crust out of the oven which should be just about perfectly golden brown okay so we need to talk about Who I am as a pie maker I make ugly pies it's just the thing you know I'm good at a lot of things and I have other strengths making pretty pies it's just not one of them this is my pie crust I typically call them rustic because that makes it seem like they're ugly on purpose but yeah I make ugly pies it's something I've just come to accept because when I try to make pretty pies they're still ugly and then I'm frustrated about it so I just stop trying I just rolled the pie crust out it's generally pretty ugly and I'm okay with it let's put the filling your hands alright there it is my ugly but I'm sure delicious pie based off of licking the bowl it is absolutely amazing it's very very good so I'm going to put that in the fridge to chill we're going to some friends house for dinner and I'm going to take that with me now I still have the egg whites from taking the yolks out here and if you wanted to make a meringue with these egg whites for this pie you totally could but I'm gonna go with whipped cream tonight because that's what I have that I'm going to use now that is a super easy recipe that honestly and most people can make even without a lot of experience in the kitchen there are also several other really great pie recipes in this book some of which may be covered by the other people involved in this collaboration and if you want to
