hey I've been searching for the perfect chocolate cake and never realized it that my mother-in-law had it all along once she made this cake for my daughter's birthday party I was hooked on this episode of cooking with cat I'm going to show you how to make this delicious and simple chocolate cake uh you will die for it today we're going to be making fudge cake and this recipe is so super easy it is one that will surely become your favorite and the icing on the top really does taste like fudge and I think that's what makes it so great but it's super moist very fast and easy to make and I promise even if you're the beginner of beginners on cooking this recipe is definitely one that will be easy half a cup of buttermilk you're going to add a teaspoon of baking soda we're going to mix this together and when you mix the butter milk and the baking soda together it is going to start becoming kind of bubbly and frothy so be sure that you give yourself some room you're going to set this aside because you don't need it just yet you're going to this at the very end right just before you put in the just before you put it in the cake let me sit this in here we are going to actually sift together our flour and our sugar together you're going to take two cups of flour 2 cups of sugar and you're going to sift it so we're going to take our two cups of flour I'm just using a strainer it's easier to do that and two cups of sugar you're going to sift them together to get rid of all the lumpy thing all the lumps that was pretty good but now that that is all sifted you're going to see that it makes a real fine powder and its really really fantastic now that we've got our dry ingredients taken care of we're going to actually start working on the wet ingredients so got my little saucepan here what we're going to do is turn it probably on medium high heat and we're going to take two sticks of oleo which óleo is old term for margarine or butter and I use margarine because it's just kind of better we're going to take our two sticks of oleo we're going to put them in our saucepan and get them to start melting there's that we're going to take two tablespoons of cocoa and we're going to add that in here as well okay once we're done with that we're going to add the chocolate you need to buy baker's chocolate it comes in a bar and it's going to come in a box or kind of torn in two but it's kind of like this as you can see so we're going to take that you're going to actually half it whoops add that to it set the other half aside because you will use this other half of the baker's chocolate so set it aside where it's easy to to get and then we're going to add water and you're going to add a cup of water ok I want to I want to insert something in here pretty quick we can add this to the show but also want to tell you guys live here when you add baker's chocolate or when you add and baking chocolate like in the bars this is not something you go eat it is very bitter and you don't want to use lot you don't want to go get a Hershey's chocolate bar either because it's not going to be the same thing this is a much more concentrated chocolate and it will give your food a richer flavor things are starting to melt it's starting to look really good here we're going to bring this chocolate mixture to a boil so we've got the two sticks of oleo we've got a half a bar baker's chocolate two tablespoons of cocoa and a cup of water and we just bringing this to a boil once it starts boiling will be ready to add this to our flour and sugar mixture that we already have you want to stir it you don't want the chocolate to adhere to the bottom of the pan so you do want to stir it to make sure that you keep it off the bottom of the pan and you want to melt it at a medium to medium-high heat you don't want to do it at high because that will scald it and you don't want that I was making this the other day for a church function and my daughter asked me if she could lick the saucepan or take out and I was waited till it got very cold because obviously it was going to be too hot if she ate it right then and when she started eating on it she was just like Oh what is this I'm like it has no sugar in it is just totally bitter chocolate it's not sweet at all it's kind of buttery because you've got two sticks of margarine in it but that's about it boy oh boy oh boy oh okay once once the chocolate is boiling on the stove which it is at a rolling boil it's doing really good and we're going to start adding it now here's a secret don't dump this entire thing of liquid chocolate into your flour mixture because it can be really messy do a gradual kind of thing trust me trial by fire is always the best so we're going to pour a little bit in and then we'll just keep adding to it so I'm going to do about half the mixture there we go and then turn it on just a little bit we're going to just kind of get this going and a add a little bit more add the rest of it okay and it's really doing good at mixing let's do a little bit higher speed here get it going real good make sure there's no lumps in it it'll be a real thin consistency so don't be alarmed because you're going to think wow that's way too thin to be a baked cake batter it's okay okay now that that's mixed that looks so awesome oh my gosh it looks so awesome now we're going to add the eggs two eggs shrine on in okay and very carefully see how much this has actually risen to the top it is this is the buttermilk and baking soda mixture we're going to go ahead and add all of that in we're going to mix this again and this is even going to get thinner so it was already kind of fun when you did it now it's going to even get thinner beautiful we're going to pour the mixture into a jelly roll pan and the jelly roll pan is like a thick cookie sheet and it's probably stands about an inch and around the edges or whatever you're going to spray that with a nonstick spray i use pam organic and then you're going to flower it and you're going to coat the bottom with flour and then you'll dump the rest of the flour out you're not going to leave it in there so it'll be really good and coated and that just isn't more of a preventative for it not to stick ok so let's take this and you're going to see that it's really liquidy so we're going to go ahead pour it in look so amazing and it is so fantastic telling you when my mother-in-law makes this cake it is gone in a matter of minutes it is just incredibly good now that it's poured in here we're going to bake it for 35 minutes in a 400 degree oven ok okay we've just put our fudge cake in the oven at 400 degrees it's going to take about 35 minutes to bake and now ladies and gentlemen it is time to wait okay now it's time to make the fudge topping or the icing that goes on top and this is really close to being fudge anyway cuz you're going to cook the chocolate mixture and then add the confectioner sugar or the powdered sugar is actually what it is you're going to hear things called confectioner sugar but it's it's powdered sugar so let's just go ahead and get started we're actually going to start on the heat we're going to turn it to about medium medium-high if you recall when we do our chocolate mixture we had two sticks of margarine this time we're only going to use one so one stick of margarine we're going to use two tablespoons of cocoa we're going to use the other half of our baking chocolate bar so we did have for the cake and we're going to use the other half for the icing and now we're going to add 6 tablespoons of milk if you recall when we did our the cake we added a cup of water this time we're going to only add 6 tablespoons of milk just adds for a richer flavor again you want to start consistently so that doesn't stick to the bottom and it's already doing really well the butter is already doing pretty darn good or the margarine chocolate is melting getting nicely okay once the chocolate is fully melted then you're done you don't have to wait till it boil so we're going to turn the heat off because the chocolate is already melted and it looks really really good okay we're going to add 1 pound of confectioner's sugar or powdered sugar there we go mountain of powdered sugar and then you're just going to add this chocolate oh this looks so good I'm just going to add every bit of it okay now we're going to start stirring now at this point in time when you're adding all your the chocolate and the powdered sugar together feel free to add nuts peanuts whatever you would like to do I actually like to add my nuts at the very end after I've poured it on the cake then I kind of place nuts on there because people like myself don't like nuts in things and I want to be able to choose if I eat that or not so a lot of people do a lot of people love nuts on things I'm just kind of weird that way okay mix it real good you can use your mixer if you want now from here we're going to add a teaspoon of vanilla I use a really good vanilla when I'm baking I actually get my vanilla for Mexico because I think Mexican vanilla has a fantastic flavor and this Mexican vanilla actually comes from Cozumel so we got one teaspoon beautiful oh so good yeah and stir this in this looks so good and it just smells yummy you know and when you add vanilla to make sure like this you're actually it actually kind of makes a little bit shinier so that's really good and mixed good you're going to make sure you have as many lumps out as possible and you can basically set this aside now being is that our cake is still baking we're going to win it once it comes out of the oven we're going to actually put on a panda have let it sit for about five minutes so I'm going to put some saran wrap on top of this or the plastic wrap on top of this so that it has it won't get hard okay so we're putting the ceramic on this so that doesn't get hard and it's still warm because the chocolate was actually on the stove so we're going to just kind of set it aside beautiful okay once we've taken the cake out of the oven you're going to want to let it rest for five minutes to let it cool a little bit if you got like a baking rack you want to set it on the baking right just to kind of let the air flow underneath it as well to kind of cool it off as much as you can now what we're going to do is we're going to take our fudge topping and start pouring this is amazing oh my gosh now we got that all poured in we're just going to spread it on all over you want to get all over every little inch of the cake make sure every bit of this cake is covered with the fudge sauce oh my gosh this looks so amazing now you're going to take pecan pieces and you can even use like the finely chopped or even whole pieces but you're going to take it and you're just going to drop them and you're done you've done it you're going to want to let sit for just a few minutes but I'm not letting it
