g'day I'm sure sir and I'm here with out of the cocktail we're here in collides classic lounge in the shadow Victoria and today I'm going to show you how to make a Vespa now the Vespa if you don't already know is the chain on tipple that's what he drinks it's in the Casino Royale it's more of a cult classic now and in fact it's one of the only cocktails ever created by an author for a character now other cocktails being created in fiction for someone who doesn't exist so it's a very simple mix it's a good blend of the classic it's a twist on a normal gin martini so what it uses this vodka gin and Lily you know the vodka in jeans that we use in a day a little bit different a little bit off the side you may know them it may not we've got the siku from Greenland which is a great little vodka that uses ice from ten thousand year old glacier we have Plymouth which is the only proprietary gin in the world it's actually only be allowed to be a made in Plymouth with water from the Dartmouth and then we have Lille a Blanc which is a white wine aperitif from Bordeaux so it's white wine fortified with alcohol and fruit juices this is a pretty simple mix so basically when you're making a martini the secret to a great martini is ice so you want to chill the shaker off there so we've got a good good chunk of ice in there and now we're going to make our drink so we're going to use a full ounce of vodka a full ounce of gin now when it comes to making you Vespas you'll read in cocktail books all over the world there's always different amounts of how much you know how much [ __ ] you should put in your Vespa it's always up to you I like the 1 to 1 it's very easy very simple more classic style and it brings through the gin war with the vodka and the vodka works well with the gin and then we're gonna use a full half ounce of Lille now of course we're going to always do the very very particular rule of if it's straight vodka or straight Jen or any straight spirit always stir it never shake it now I know bond loves is Vestas shaken not stirred but it's going to aerate it a little bit too much dilute it down a little bit too much so what we're gonna do is just give it a stir they need a stir it for like 10 to 15 doesn't need to be a major major stir and all you're trying to do right now is again folding that ice through the liquor diluting it down chilling it that's very very very quickly and as you can see we have the chill on the side of the glass we have our chilled martini glass now this is a nice little antique I've picked up from the local antique store on 4th Street we're going to pull it in perfect pool we're going to do again potato peeler lemon twist this time though so now the lemons going to work really well the Plymouth which is more of a citrusy cuts or kick and the Lily which has definitely got a really good citrus kick so we just can do that over the over the glass again we have a beautiful twist there again no pith and what we're going to do is a lovely little cleanup beautiful little just again presentation presentation presentation a little twist now you do see some bar turns if you ever asked one they'll Rim the glass with it it's all up to you I think that with how much citrus notes they're already in the drink let's just drop it in and there we go we have one Vesper now this pull out of the cocktail November 7th and 8th here in Victoria you
