welcome back once again so how to cook great food calm if you haven't already please click that button and subscribe to our Channel today I'm gonna make some curry powder this is a kind of Indian version let's just take a look at what we've got here cumin seeds and coriander seeds and here I've got fenugreek seeds these you kinda need quite a lot of then you can add all these other flavors so I've got some green cardamom I've got some black mustard seeds here I've got some nice cinnamon they look up from Sri Lanka actually very nice and below that just a few cloves not that many some red chilies here again there are so many different types of dried chilies you can choose the one you want a bit of bay leaf and here we've got some turmeric powder so what we're gonna do I'm going to take the turmeric powder out of the equation the rest of this stuff we're gonna just put in a dry pan or skillet and just gently roast it get some of the lovely flavors and the aromas happening then we're gonna grind it we're gonna put it for a sip and it's done very simple okay so a dry pan of some sort we're just gonna add in all our seas there's our bay leaf black mustard seeds cumin coriander fenugreek green cardamom pods dried chilli and I've kept the seeds in my ones you can take them out if you want you want less heat that lovely bit of cinnamon and a few cloves now what we want to be doing here is slowly roasting this now the longer you do it for the darker it's gonna become so nice and you know we're not on a simmer above a simmer you just want to kind of do this for like two to three minutes you'll get a little tiny bit of smoke coming off and at that point you're probably about this now of course you could be adding black cardamom it could be adding what it's just so many things you could have seen this quite frankly this is so so many different flavors you'd be playing some mace the list goes on and on this is a nice little version I like I like this combo and like I say the cumin coriander and the fenugreek you kind of need about twice as much as everything else I'd point but play around with it you do it a few times get some black peppercorns in maybe you know just get it exactly how you want it so just about two or three more minutes moving it around all the time and then we're gonna just put it in a grinder grind it all together then we're gonna mix our tumeric in turmeric powder and it's done so simple can you get that a few little cracks and pops it's gonna go up and that's it done fine for me it's like a safe okay let that just cool down for a little bit then I'm gonna get it into my grinder you need to kind of get it into like a coffee grinder or blend up and give it as fine as you can I'll be back then okay so cup them cooled down now I'm just gonna get them into this grinder the way I'm gonna do is pop that trimmer opening right now get the lid on and give it a blast okay so we've got a beautiful powder here which is actually fine just like that it's ground really nicely and if you want which I'm going to just kind of run it for a Sid just to kind of get any lumps out but it's looking pretty good so I kind of fine mesh they're gonna pop it in we're simply just gonna get it right through there and actually seam got beautiful powder there now any lamps or any bits that didn't quite go through you can either discard or if you want you can run them through the grinder again there you go so I've done that for you to go into one more time or discard it and we've got beautiful powder that okay and there you go really simple beautiful curry powder nice and fresh now I tend to do is only make small batches of it because it can lose its power quite quickly so you don't make loads and loads you give that in a kind of airtight container and it'd be great for about you know a couple of weeks I would say before it starts to wane but that's it hope you enjoyed that don't forget to subscribe to our Channel we'll see you soon lots of love
