look what's cookin it's brought to you by the Culinary Institute of Virginia hi I'm Bonnie Johnson here with chef Wade O'Neill from the culinary institute of Virginia school of culinary arts of ECPI University and you have such a pretty dish for us today well you know I do a couple of dishes I keep reserved for for romantic moments and Valentine's Day is right around the corner and so what we wanted to do is a stuffed quail with a butternut squash pancetta leeks and sourdough bread and real simple to do it's basically three steps and then it's done okay we'll walk us through the three steps well you take your basic ingredients you start with your pancetta your under the fat out of that and you get that wonderful dairy esque flavor from the pancetta yeah and your butternut squash you cook till slightly tender yeah and your leeks your sourdough bread and if you want you can add just a little bit of garlic just very light on the garlic perfume that ends there that warm it through because of the stuffing will be cooked twice take it off stuff the quail season with salt and pepper sear the quail off stove top finish in the oven for six to eight minutes at about 400 degrees so you could get in a hot oven yes well it's in the oven I made the the pesto a pistachio style pesto I had a half a clove of garlic I had my pistachio nuts I had my pumpkin seed oil salt pepper and touch of olive oil used my mortar pestle since I was making a serving for two to four and plate that plate the quail and it's done it's such a beautiful dish and really from start to finish you said 14 minutes 40 minutes and I mean you never think you could do quail or something like that oh no this is these are you could use chicken if you wanted Cornish game hens if you wanted the stuffing is pretty universal you could switch out the butternut for acorn you can go a spaghetti squash if you wanted to move that direction and you could also say you said you walnuts if you didn't like the statute-- walnut pesto as well absolutely well if you want the recipe be sure to check it out it's at wtae.com for more information about the Culinary Institute its chef va.com look what's cooking you
