[Anthony] We're following one of the park rangers to his mom's house to make some Welsh Toffee [Leila] I mean that is how you find a recipe you go hiking and you ask the park ranger if you can meet his mom [Leila] "cuvlath" [Guto] "cuflath" [Leila] "cuflath" "Cyflath" [laughter] I'm trying so hard to concentrate on saying it right! Cyflath! Welsh Toffee Oh wow! It's amazing 😋 A hard caramel It's so sweet and it melts in your mouth and it's like a buttery deliciousness! Cyflath by Elisabeth from Tangwen We have to put the water in first. dwy lwy fwrdd dŵr: 2 tablespoons of water wyth siwgr: eight ounces of sugar dau lwy o triog du: 2 tablespoons of black "triog" treacle pedwar o margarîn: that means 4 oz. of margarine If you used salted butter, that would bring out some more flavor as well. So basically now we'll start the melting on a low heat. You just stir it and leave it until it reaches the boiling point which is very high. I remember being told "don't come near this" because it's awfully awfully hot. So when we were young, my mum used to make it after we'd go to bed. [Elisabeth laughing] We'll wait for this saucepan all to bubble. What we'll do then is we can transfer it to higher heat. It's that fine line between burning and not burning, When the ingredients boil they tell you not to stir it. My mom used to say, "Don't touch it! Don't touch it!" So you know, You're supposed to look at it to see there is any change. I put a thermometer in. My nain didn't used a thermometer, she used the glass method: So basically you get cyflath on a spoon, What you're looking for is when it hits that water, it'll form a strand. So that's formed little soft disks, so you know that's no good. So those are forming tails or little strands now. The soft ones can form tails as well but what you want is a hard tail. So once I got it out of the water, it should be hard like this, give it a snap so that's how we know it's ready I greased the pan, although it was nonstick pan you never know. I greased it, I did the Irish: "to be sure to be sure" so I greased it and then put some of the margarine on the paper so hopefully it'll come away from the tin when we go to explore in a minute. It's super hot, it's over 130°C. We'll give it until it's firm to the touch When we were kids, my nain had a pantry [with cyflath] most of the time it'd be courteous to get permission but some did vanish without permission as well.
