Please explain how to make carolina reaper pepper jelly

this is sci-fi and today we're going to be going through and making reaper jelly now I've already got a little the prep done not a whole bunch of it but just a little bit because it's a really odd process so from there we are going to I'm going to go ahead and go through the list of ingredients that we're going to have we're going to have okay switch to camera looks like so I'm going to have is bell peppers three red bell peppers I've already got to come up and I'm using this little bullet here as you can see to get everything set up from there we put those in a pot with a cup of our two cops apple cider vinegar one of them needs to be blended in with this and the other one needs to be in a pot with six cups of sugar yes six cups it's a lot of sugar and from that point on we will pick this back up and I will show you what my progress is alright so here is the bell pepper pari this is all blended up nice and good though it is a little bit too much in there for now so I'm going to do is I'm going to do them separately and two different containers of course I'm going to be using so the number one soap he calls for three ghost peppers because Reapers are a little bit smaller give me a second Weaver's here I go strippers are about that big so the Reapers here I'm going to go ahead and put four of these in saying with the apple cider vinegar and I'm going to put those in the pot and stir that all together and then I'm going to do another thing of apple cider vinegar and six cups of sugar and then put all that together and from there I'm going to cook it and I'll show you the pot here once that's done as a note when you're cutting these things especially when you're seeding them and such like that to get the seeds out and the stem off make sure you wear gloves these things are really really hot once or cut in two and they could really hurt you Ronna these things go up to 1.5 to 2 million Scoville and these things are some of the hottest peppers in the world not B hottest anymore since the dragon breath came out but these things are really nasty so we're going to be really careful when we put them in and I'll show you once we get to the pot base okay so what I've done here is I've added in my two cups thunder vinegar and in my six cups of sugar and it should look like this once it's all served together it's quite a bit of sugar in there but it still looks like it's pretty much liquid this needs to boil for quite a bit you see where it is you know it needs to get to a rolling boil for 10 minutes so let's see here yeah it's going to take a little bit for it to get to the rolling boil stage plus the canning process itself is going to be a little bit difficult but let's let's get to the rolling ball rolling boil stage it's going to be really nice alright well will you put out the boil I'm going to go ahead and do some cleanup here just because a messy workstation is not really good to have that plus it's going to take about 15 20 minutes to get to boil at all then you have to let it boil for 10 minutes and then watch it during that time so it doesn't boil over that be a bad thing so we're going to be working on that and cleaning things up and from there let me see here I've already cleaned up my workstation here as you see this my pectin for the next step there's my jar of my funnel there and over here we've got my jar those seven half pint jars in there so in that seven half pints I should be able to get at least six if not the full seven out of this makes it I'm doing which is also if you want to count on three and a half pints which isn't too bad so from there we will continue on and I will see you once all this is boiling for the next step while that's starting to boil did you see it start to bubble now I need to make sure that I have water on here it looks like it's yep after that definitely let those got a good flame under it I was lit that's what I'm going to be using for my canning so all the jars that are from this are going to go into here I also have majora and up here now I soaked them all in hot water so they're warm and hopefully they will be nice and ready when all of these are done all right I will come back in the next step because let me just throw this well here we are about five minutes in and this is already starting to look a lot like jelly again to that point it's looking good definitely looking good and we got to keep that agitated stirring up just to make sure that it doesn't clump or burn or anything like that plus to make sure it's well mixed if you can see closer I don't know how well you see little chunks floating in there I believe that is the Reaper pepper there and that means that over a little bit you will get a nice little by the Reaper in the jelly and I'm going to see how this is after a little bit close down here we haven't gotten quite as a pectin stage yet this is still in the boiling stage and we will get to that here in just a moment all righty well it is the next step time so we got the cert Oh Joe a surge L liquid pectin here I'm going to put one can into here or one a package you open this up here I would really prepped okay we go one package of this goes in there we stir it again this get it settle down games whoa boots bowling good now and starring kind of combs and charting waters just a little bit here but let's go ahead give my snipper clippers here okay so one package is a three ounce package goes into the jelly okay now it's done once that's in there you give it a good stir to get it all mixed in all righty and then you love the boil for one more minute okay now that that's all gelled up well it's been in there for about a minute now it's a fun part we are going to go ahead and jar these so I'm going to take my spatula here do this one here or my ladle and give me a moment while I adjust so I can set my camera down a little bit lower for you okay so I can see my funnel okay so we're going to do go ladle this well funnel obviously ladle this and here I have a paper towel down so I don't still too much here to walk there we go there's one half pipe there's two almost more there we go that's a little more windows one here there we go let's go do a third one here three okay let's get a little bit harder they get a good scoop here I might have to tilt it a little bit at the good scoops since there's four I think I might be able to get six others maybe a full seven is all the question but six is pretty much a definite there we go one more got five total now - yeah I'm going to probably get a little bit of the seventh one but maybe not a full seven I think I get a full seven for this okay we're going to pour with left in this into here let's see if I can get this last jar here oh there we go I think that's a little bit here little bit here yeah that's a full seven drawers okay and with that let me do and it's obviously be careful of it but take a paper towel or something like paper towel here and wipe around the edge a rim here of each glass just to make sure that it's clear ooh hot hot hot these things are really really high now heat hot not spicy hot so click that done wipe them off go ahead and take your cutting notes got all seven here one two oh come on three these are well been sitting in hot water to sterilize them and to warm them up because I don't like to be cold after that go ahead and each can or you start and plugging down lids hand tight the rims there Thatcher it was hot it was supposed to because it was at the bottom of the container to the top and also it's a lot shorter fold okay fine this up come on there we go got that one okay one more get one more okay ha Wow their time is boarding so yeah that's hot okay so I'm going to do going to put all these here into a canning bath over here to do that I'm going to use a towel to try to put them into the bath because see there's that or using tongs which I can do I'm just afraid to drop it if I use a tongs there we go that's a good one one - now counting that is going to be enough to go over them over them and hopefully without overflowing the pot it looks like I'm going to get to the overflow in the pot park here so let me take a little bit off a light it over from the pot park somebody puts it a couple cups out because volume we got three cups around and sorry you guys can't really see this that well that's mostly me just doing what I need to do here okay here see there's the water back there going to sit in here for on ten minutes nice and tight and they should seal at that point and from there as you see I'm sweating because it's not the smell the heat heat it's the heat of the temperature heat of the kitchen because I'm not used to cooking and I'm a fat dude so I'll come back after these guys are done and they've sealed and I will see you just a little bit and I'm also going to do a taste test on what I have left in here so we'll come back in just a few minutes alright it's been around ten minutes and these have all been sealed I do want to make sure that they of all of our tops are not popped this one might need to go back in and that will need to go back in Rustom er we're fine so when do is pop those two back in and let's go ahead and go to the taste test here well I did during the time that we were tending those I put some of this in the freezer basically a quick chill so give me a moment here to switch my camera all right everybody here we go we got just a little tiny bit here of the jelly remember this is Carolina Reaper jelly now what I'm going to do then I have a drink because I know this is going to kill me so I'm going to take this take a taste of it and we will see how I react here first you give the sweet and you get a lot of sweet front then you get that bite that seriously hardcore bite of heat that Reapers and Zillah and ghost peppers and all those other peppers have and because it's a jelly it sticks to your mouth I would definitely give me a second I would definitely recommend they use something to mild it out and if you like peanut butter or something some other thing instead of just eating this by itself because a little bit of this will go a long way you can see here got that much of the joy left for what I stored for molars up over in the pot and of course those jars let me go ahead and oh let's say popped okay oh good we're all sealed now well which way there we go yep they're all sealed now so so they're all good I can set them all aside and let them cool off and I'll have my California reaper jelly really good really hot I recommend trying it sometime most people will go above ghosts upper Reaper is about two steps about that then about another step above that or two is the dragon's breath those are only in the UK right now and you can't get them here in America also the peppers are this big when they're that big you have to put like 50 of them in to get the same effect to this about four per pepper and I'm used is for after a second I'm really sweating hardcore here that was good jelly is really taste great it's just a lot of the pain too but when it comes to doing other stuff I think because you see my face is turning red because of the heat of the food and just heat and general and yeah alright I really appreciate you watching and I will see you all next time and if you
