Please explain how to make leek, mushroom and gruyere pie | waitrose

this recipe is a real family favorite perfect for an autumn evening it is my leek mushroom and gruyere pie now to begin with i'm going to pour cook some potatoes it's got some boiling water they just need about five minutes and while they're cooking i'm gonna prepare our leeks a little bit of oil into a pan and then we're just gonna roughly chop i'm gonna leave my pieces quite large there we go and then next i'm going to add some chestnut mushrooms i've just quartered those and all we're going to do is cook these for about five minutes and just soften them down gently so my vegetables have softened nicely i'm just going to turn off the heat and i've got my sheet of puff pastry ready so i'm just going to stir in now some creme fraiche and some grated gruyere so in that goes and the gruyere is going to add loads of flavor it's sweet and nutty it's going to be delicious with the leeks and the mushrooms let's just give that a quick stir and then finally let's get those potatoes in i'm just going to quickly drain them and then just pop those in and i've got a pie dish here that i'm going to use give it a quick stir together just try and get everything coated in the creme fraiche and the cheese mixture and then into your dish there we go and then just smooth it out a little bit now the potatoes are still a little bit undercooked but by the time the pies baked they'll be just right so for the pastry i've got a sheet of puff pastry it's ready rolled if you can just take a little strip off if you want to just to decorate your pie and then let's just pop it over the top and just tuck the edges in then brush the surface with a little bit of beaten egg and then if you do want to decorate the pie just a little bit of flour stop it sticking and then just roll out your trimmings a little bit thinner and i'm going to do traditional leaf shapes and you can mark them out with your knife if you want to just a few little patterns and then brush in a little bit of egg make a little hole to let the steam escape pop those leaves on there we are so our pie is ready to bake i'm just going to pop it onto a tray in case it bubbles over and it needs about 25 to 30 minutes in the oven until it's puffed and golden brown and there we have it my leek mushroom and gruyere pie and for more of my recipes remember to subscribe to the waitrose youtube channel
